A: Standard sensitivity is fine for most applications. Low sensitivity is best employed with trained or very powerful vocalists or public speakers as for opera, rock church and worship.

A: I hooked a sanken cos-11d that is wired for Sennheiser transmitters up to a small sony hand recorder that has similar connections to the Zoom H1. This worked fine, except that the audio was coming in on the left channel only. If that doesn't bug you then I think I can tentatively say it should work. But you might want to get the B3 with normal sensitivity as this one has headroom, read as a bit of a pad. i.e. if the subject whispers, you might not hear it on this mic unless you turn the gain way up.

A: This model of the Countryman B3 is designed to connect to a Sennheiser transmitter that features a locking 3.5mm connector. We have had customers who claim the mic will function and the H1 is able to supply proper power to the mic as well.
