First, what your talking about is macrophotography and while Lens Baby lenses can do this type of photography from what I know they are more specialty lenses. The Composer Pro as well as other lenses by "Lens Baby" let you change the point of focus. I myself prefer to use a good macro lens One technique I plan on using is called HDR photography. Photoshop has a limited capability which I plan on experimenting with. My first results are good but depending on you budget you can get other plug ins. My own philosophy is to use high quality macro optics and then use automated focusing rails (my future plans). Art(which photography is) is matter of creativity so you have to decide what is right for you and then get the right equipment based on your budget.
